Jams, preserves, and marmalades made in small batches in Bowral from local fruit, available through an "honesty box" on the weekends. Jam making workshops are also run over the school holidays.
Bowral Jam is a small, artisan food project by top-ranked commercial photographer Hamish Ta-mé. Hamish makes jams, preserves, and marmalades in the Southern Highlands as well as running workshops during the school holidays. On the weekends the produce is available through an "honesty box" on Oxley Drive near Bowral Pool. "I first started making jam and marmalade while living in the lush hinterlands of Byron Bay. I found an orange tree thriving on neglect and a one-hundred-year-old book of recipes and started experimenting. Eventually, I started selling my marmalade in the local markets and developed a following. Over COVID lockdown I had time to rework old recipes for local fruit in the beautiful Southern Highlands and started perfecting new recipes for winter fruits like sour cherries, figs, cumquats, and of course Seville Oranges. I LOVE making jams in a slow and entirely hand made way. Every step is a labour of love and meditation upon the seasons, the passing of time, and the radical act of hope in making something for the future. I also just LOVE eating jams and marmalades!"
