The pies at Gumnut Patisserie in the Highlands are pretty iconic.
Known for their buttery flaky pastry and rich, hearty fillings it’s pretty easy to see why they’re an ideal lunch/dinner/ everything in-between bite for locals and visitors alike.
We’ve lost count of how many ribbons and trophies these pies have been given over the years and no matter how hard we try we just can’t replicate that delicious goodness when we’re baking at home.
And not that we would need to, who needs a hot oven when you’ve got Gumnut Patisserie in your town?
Buuuuut we still just had to know, so we begged and begged and then managed to score a little sneak peek from owner Vicki to learn all about the magic that goes into making a Gumnut Patisserie pie.
And of course, we helped ourselves to a little tasting as well, how could we not??

What Goes Into These Award-Winning Pies
“For any pie you make you have to start with good quality ingredients,” says Vicki.
“All our pies are made with real butter puff pastry on top and a savoury short pastry on the bottom, it’s what holds all that yummy flavour in.”
And she’s right, as we bite into our Gumnut Patisserie pie, we’re loving all those rich, buttery flavours doing their thing on our taste buds, mmmmm!
“Quality is a top priority in the filling too,” Vicki adds.
“Since day one, we’ve been committed to sourcing the highest quality meat, always supporting our local butcher Maugers Meats.”
For the beef and lamb pies, it’s a combination of hand-diced beef and minced beef to create that unique flavour. We also can’t go past their incredible chicken and leek pie and awesome jam-packed veggie one too!

The Skill
So, it turns out to make a Gumnut Patisserie pie you also need the skills and knowledge that come with running a successful Highlands patisserie biz for as long as Vicki, her hubby Tracy and their team have been.
“Our staff are extremely skilled at making our pies to the high standards we expect,” Vicki tells us.
“We pride ourselves on consistency from start to finish and that’s why they look and taste great.”
We can definitely vouch for that! What we love about Gumnut Patisserie is that there are no gimmicks involved. Their cakes and pastries look just as amazing in person as they do on their social media and website, and they always taste as delicious as they sound.
Oooh and in exciting news a new/ old fave is back on the scene- you heard it here first folks.
The team at Gumnut Patisserie recently sent out a poll on social media asking Gum Nutters [fans of Gumnut] to help them pick a pie to bring back from the archives and into the patisserie again.

It’s not just savoury pies making us drool at Gumnut Patisserie, we’re also head over heels for their apple pies as well.
With that lovely shortcrust base, mix of apples, sultanas and cinnamon and then topped with more shortcrust that has actually been lightly caramelised, it’s just too good to pass up.
And of course, we always add a touch of cream to elevate it even more!
