Perfect for a steak cooked on the BBQ
We’ve already learned how to nail the perfect steak from local BBQ legend Charlie of Pig & Pilgrim crafting incredible Parrilla Charcoal BBQs in the Highlands, and now he’s back to show us how to top it off with the perfect sauce.
This creamy mushroom sauce is just the thing to soak up all that umami goodness from the steak and take your next barbie to a whole new level.
With just a handful of ingredients, this sauce is seriously drool-worthy and one we’re definitely adding to our regular cooking rotation.
Let’s get cookin’

Charlies Creamy Mushroom Sauce [serves 2]
Ingredients
- Around 150g mushrooms
- Good Quality Olive Oil
- Salt and pepper
- 2-3 spring onions
- 150 ml heavy cream
- White truffle oil
- Fresh parsley or dill
Here’s how to make Charlie’s creamy mushroom sauce:
1 . Start by grilling the mushrooms with a drizzle of good olive oil, salt, and pepper to get those flavours going. While your steak is on the grill, pop a cast iron pan directly into the coals.


2 . Soften some chopped spring onions in olive oil, then chop up your grilled mushrooms and toss them in. Sauté everything together. Add cream and let it reduce to your perfect thickness.


3 . For that extra kick, Charlie’s secret is to stir in a teaspoon of white truffle oil right before serving, then finish with a generous handful of fresh parsley or dill.

4 . Once your steak has rested, slice it up and drizzle this sauce over the top. Perfect!
