Truly a family affair! Chef Matty is the creative force behind the menu while his wife Cass runs front of house.
They have a gorgeous little girl, Odessa, and welcomed new bub, Althea to the Eschalot family during the winter of 2022.
It’s personal for these guys and it shows…they’re so passionate about the food, the produce, the atmosphere and the whole experience.

2 :: Location, Location, Location
Of course, there are many gorgeous venues throughout the Southern Highlands, but Matty and Cass have transformed the interior of the historic sandstone cottage that houses Eschalot to create a perfect blend of old-world charm and modern elegance.
Think midnight blue walls, stunning antique furniture, sandstone exteriors, beautiful art….and that’s before you’ve even ordered anything!

3 :: They love local
And so do we!
The meals at Eschalot are created with an abundance of local produce – much of which Matty and Cass grow themselves.
Matty is always working with what is in season and when they’re not using their own products, they source from local growers as much as they can.
When you dine here, you’re not just helping one small local business, but many more!

4 :: Feed Me menu
It’s hard to pick just one item from such an amazing range of dining choices and Matty understands that choosing what to eat is sometimes the most difficult part, so he’s created the “Feed Me” menu – where he chooses what ends up on your plate.
Not only is it a great way to try something new, Matty always loads up the plates and it’s fantastic value for money.

It’s all about changing it up and offering new and exciting experiences, right?
Alongside their seasonal menu, Eschalot offers a monthly barbecue experience built around the stunning courtyard, Matty’s love of slow cooked meat + Argentinian flavours.
