The wonderful Bianca Monley – Bowral local, business mentor and founder of Eat Fit Food –has shared a delicious recipe from the eBook she released earlier this year.

The Green Foodie – Plant Power is all about breaking unhealthy habits, feeling incredible and increasing energy [bonus!] by following Bianca’s 7-day eating plan and working your way through the amazing 50+ plant-based recipes in the book.

The Fold Southern Highlands Recipe The Green Foodie Bianca Monley

 

RAW CHOCOLATE BOUNTY SLICE

 

“There is no reason a healthy diet can’t also include treats and this one is a classic example,” says Bianca.

“Store it in the fridge and enjoy it as the perfect 3pm pick me up.”

 

Preparation Time :: 20 minutes

 

 

The Fold Southern Highlands Recipe The Green Foodie Raw Chocolate Bounty Bar

 

INGREDIENTS

Choc Base

  • 300g pitted dates
  • 100g slivered almonds
  • 70g cocoa
  • 50g cacao
  • 100ml coconut oil
  • 20ml maple syrup
  • 50g vanilla powder

Coconut Layer

  • 150g shredded coconut
  • 100g desiccated coconut
  • 60ml coconut oil
  • 50g maple syrup
  • Pinch vanilla
  • 120ml coconut milk

 

DIRECTIONS

  1. For the choc base, blitz dates and almonds then add the rest of dry ingredients and pulse.
  2. Add remaining ingredients and pulse to bring together.
  3. Tip into a bowl and bring mixture together.
  4. Line a small tray with baking paper.
  5. Add mixture and pat flat.
  6. For the coconut layer, pulse all the coconut layer ingredients in a food processor.
  7. Spread out on top of the choc base in the tray.
  8. Flatten mixture and store in the fridge.
