A simple, delicious and healthy recipe to keep kids healthy at home
The kids are home and boy, are they hungry!!! We love this recipe from the team at Explorers Learning Academy – it’s filling, it’s packed with veggies (the good stuff!), yummy and super easy for us parents wearing 259 hats right now to whip up!
Ingredients
2 x 420g cans baked beans
1 x chopped onion
1-2 x cups of mixed vegetables (washed)
1 x zucchini – washed and grated
200g reduced fat grated cheese

Method
Using a small amount of olive oil, saute the vegetables in a frying pan; add baked beans and bring to the boil; simmer for 10 minutes.
In the meantime, cook your toast.
Serve bean and vegetable ‘sauce’ on toast and sprinkle with cheese.

Alternative: serve on corn chips and melt cheese under the grill.
A great winter warmer with plenty of fibre and protein!
