Meet Venue Manager, Louis + Make This Easy Three Creeks Gin + Soda Cocktail
We love the country meets contemporary vibe of Robertson Pub & Kitchen and often pop in for a meal, a couple of glasses of wine, or a pre-dinner aperitif! Or all of the above!
One of the friendly faces we love seeing behind the bar is Venue Manager, Louis. If you’ve been to Robertson Public House, you’ve probably had a chat with him as he pulled your beer or took your food order.
Last time we popped in, we asked Louis what his favourite drink was to serve up to punters and we are liking the sound [+ taste] of the Three Creeks Gin + Blood Orange Soda he whipped up for us.
Perfect for the warmer weather!
We had a chat to Louis about life as the manager of a busy Highlands venue and asked him to talk us through making a Three Creeks Gin + Blood Orange Soda….juuuuuuust in case we wanted to try it at home.

1 :: You started at Robertson Bar & Kitchen a few years ago and haven’t looked back!
When I started, the rest of my family was working here so I decided to join them.
I was only planning to stay until I finished school before I went to uni, but I ended up really enjoying working in the hospitality industry. So I picked up full time hours, left Maccas [I’d been working there too] and in February 2019, started a traineeship here.
I went from a trainee to Assistant Venue Manager for two years, then started as Venue Manager in January 2021.
2 :: What do you love about the place?
The pub has a really nice balance of old-school and modern.
The original wooden beams and floorboards that run through most rooms, parts of the old walls we have on display and the old-school pub games that are still played to this day really complement the modern feel of the spaces we’ve renovated and fixed up.
The local community is my favourite thing about the pub though – you don’t get the chance to have that connection with your locals at many places and to have that here is a real privilege.
3 :: Okay, you’re whipping up a cocktail for us today. Tell us about it and why you enjoy making it?
The cocktail I chose was the Three Creeks Gin + Blood Orange Soda, garnished with dehydrated orange and lime.
Pop some ice cubes [just a couple so it doesn’t water it down too much] in a spirit glass, add 30ml of Three Creeks Gin and top it up with blood orange soda.
I use Chris’ Flavoured Mineral Water – Blood Orange Flavour.

The blood orange soda really complements the gin which has a soft orange note to it.
The soda gives a deep orange colour to the cocktail and really makes it stand out.
Three Creeks Gin is our own gin we’ve created to represent Robertson.
It’s smooth with a nice citrus note that goes down well with most mixers or even just a couple of ice cubes.

4 :: Looks like the perfect summer drink! Any insider tips when making it?
If you do want more of an orange taste, use a fresh slice of orange.

5 :: What’s your favourite bevvie to drink when you’re off the clock?
It’s Gentleman Jack and Coke in a short glass for me.

1 shot (30ml) Three Creeks Gin
Blood Orange Mineral Water
Dehydrated Orange & Lime
Pour your shot of Three Creeks Gin over ice, top with Blood Orange Mineral Water and add dehydrated orange and lime to garnish.
