Milton Park reopening is a moment that lands differently for locals. For more than a century, the Bowral estate has been part of the Southern Highlands landscape, a place tied to milestone celebrations, long lunches, garden walks and the occasional sense of occasion that comes with somewhere grand.
From Monday 2 February, the historic property officially reopens as Ardour Milton Park Bowral, marking a new chapter for one of the region’s most recognisable addresses. And while much has changed behind the scenes, the more interesting shift is less about the renovation itself and more about how the place feels now.
This version of Milton Park feels designed for lingering.

Established in 1910, Milton Park has long held a particular place in the Southern Highlands imagination, grand, formal and reserved for milestone moments. Weddings, anniversaries, high teas and special-occasion stays all came with a sense of ceremony. You dressed for it. You planned ahead. You didn’t just drop in.
Ardour’s approach softens that formality. The heritage remains front and centre. The gardens, the architecture, the sense of scale, but the mood has shifted. Spaces feel more open, more social, and less concerned with preserving distance between guests and the experience itself.
It’s still special. It’s just not stiff.
At the heart of that change is Horderns, the estate’s signature restaurant. Now relocated within the homestead and overlooking the gardens, it’s a space clearly designed to draw people in rather than impress from afar.
Executive chef Mark Holland brings a pan-European approach that feels well suited to the Highlands: seasonal, produce-driven and designed to be shared. Rather than leaning into the theatre of fine dining, the focus here is on generosity with dishes passed around the table, conversations stretching longer than planned, and a pace that encourages staying put.
It’s food that doesn’t rush you out the door, which feels very much in step with how people actually like to eat here.
Alongside Horderns, The Polo Bar offers a more relaxed setting for cocktails and smaller plates, with a dedicated charcuterie room opening soon. It’s an idea that’s already captured attention elsewhere, but locally it makes sense: something informal, social and tactile in a region that values time spent together just as much as what’s on the plate.
High tea, a long-time favourite at Milton Park, is also returning, refreshed, but still recognisably itself.
What stands out most about Ardour Milton Park Bowral isn’t a single feature, but the overall direction. This feels like a place that wants to be used, not just admired.
Long lunches that turn into afternoon drinks. Evenings that don’t require a reason beyond “it’s a nice night”. A bar you could meet friends at without feeling underdressed. A restaurant that works just as well for locals as it does for visitors staying the night.
That matters. In a region where hospitality has steadily shifted toward warmth and authenticity over formality, Ardour’s timing feels right.
Later this year, the estate will also welcome Èliva Wellness Spa, adding another layer to the experience. Rather than positioning itself as a destination spa in isolation, it appears designed to complement the slower rhythm already set by the grounds, the gardens and the dining spaces.
It reinforces the idea that this version of Milton Park is about staying a little longer, whether that’s overnight, over lunch, or simply in the moment.
Ardour Milton Park Bowral is also the first property under Ardour Hotels & Estates, a new hospitality brand focused on immersive, regional experiences. But what matters more here is how thoughtfully the estate has been reintroduced to its own backyard.
There’s a confidence in not over-explaining the transformation. In letting the spaces speak. In trusting that locals already understand the significance of the place, and simply inviting them back in.
Milton Park has always been part of the Highlands story. This reopening doesn’t rewrite that history; it loosens its grip just enough to let a new one unfold.
