The Offering
Opus Coffee Brewers offers a considered short menu of baked goods handmade in house. Legit everything in their cabinet has been baked on site fresh daily from their sweets kitchen upstairs from salted sourdough cookies, focaccias, bombolini (gf italian doughnut) and their muffins are a whole thing. Flavours rotate weekly with 3 on offer, a vegan one, GF and their original recipe.
Offering a seasional menu with a few specials and a rotating Bagel of the Month. You’ll find hand rolled sesame, blueberry & poppyseed bagels, their bread is a sourdough focaccia which you can get with fluffy french style omelette & glazed pork belly.
Along with lox, pastrami and the odd schmear bagel and a tartine (toast + toppings) brunchfast offering.
The coffee
Offering up Single O out of Surry Hills on house with rotating guest roasters in every month on black / filter. You’ll always find a hot fresh filter ON TAP maybe even a cheeky Biscoffee.
The Cure
We cold smoke and cure our own Lox (Salmon for the uninitiated) a process that takes between 3-4 days.
Our pastrami is cured in a rub of coffee, brine and spice then finished with a hot smoke. taking just under 2 weeks from start to finish.
The bagel process
Lights go on at 4:00ish o’clock every morning. Bagels are cut, weighed and balled up for their first proof. Then we roll them into that classic / necessary bagel ‘O’ shape and let it do its final proof. Once they get to the right size we boil them in sweet water for a few minutes to get their distinct chewy texture.
From there we toss them in either sesame, our everything mix or just leave them plain and bake.
